How Do I Know if an Oyster Is Fresh?
Fresh oysters smell like the ocean, clean and briny. If an oyster has a strong fishy or sour smell, don’t eat it. Also, check for liquor (the natural juice inside the shell) and make sure the oyster looks plump and glossy, not dry or shriveled.
Do Oysters Taste Different Depending on Where They’re From?
Absolutely. Oysters take on the flavor of their environment, a concept known as “merroir” (like terroir for wine).
